Why are UK sheet materials 2440 × 1220mm?

They are still made to the old imperial 8 × 4 foot size, which converts to about 2438 × 1219mm and is rounded to 2440 × 1220mm. Some suppliers also sell true metric 2400 × 1200mm sheets, so check before setting out.
